
I try so hard to make food that everyone will like, especially the kids.
Then one day, out of the blue, I recalled a noodles with cottage cheese dish that my grandma used to make for me when I was little. Out of sheer laziness I cooked that for my kids—I had no better plan for dinner.
My son’s response? “This is The Best pasta in the whole world!!! The best pasta you’ve ever made!”
I was floored.
So I can’t stop thinking, why, why do I try so hard and make things more complex? (It’s just my nature…)
Just cook some pasta in salted water until it’s al dente. Drain, put in a bowl, add some salt, 1-2 tablespoon of butter (The secret ingredient!), and mix.
Add cottage cheese, mix, serve. Bon appetite.

I was lucky enough to have lunch with David Tanis of Chez Panise last year. He mentioned eating this dish – noodles with cottage cheese – as a comfort food favorite! Maybe your kids have rockstar chef tastes!

I don’t usually have cottage cheese on hand, but I bet this would be just as good with ricotta cheese.

It’s funny, I don’t even have kids and I sometimes wonder the same question myself. I feel like for growth I should constantly make things that challenge me and help me learn new techniques, but often when I make simple things out of sheer laziness it makes me question this since simple foods can be so good.
