HeavenlyWord,
Thank YOU so much for returning and leaving me this message!
I'm extremely to hear when people use my recipes and like them. And more than this, I loved hearing about the personal touch you gave them :)

Made 3 of your dishes for dinner last night, these yummicious meatballs (I used sautéed chopped onions and grated cheese in place of the pancetta), your 'lighter than air' potato pancakes (added some chopped parsley in these) and the baked chicken legs. Everything turned out amazing! My husband is out of the country on work, I'd invited a couple of my closest girlfriends for a girls night in and they both ooohed and aaahed over the meal! I can't wait to make these dishes again when my hubby is home, am sure he'll love them! What's most amazing is the ease with which I could make these scrumptious dishes...they're definitely gonna make loads of appearances at our table from now on. Thank you thank you thank you! :)

Oh I will definitely be here often, am a fan already, lol! I will be trying the meatballs tonight, will use sautéed chopped onions to give that extra moisture. I'll let you know how they turn out. Thanks for the quick response! :D

Thanks for the feedback! Its' always nice to hear.
Hope you’ll come back here again.

As for pancetta. It adds flavor and moisture, so instead I would use sautéed mushrooms chopped fine, or raw/sautéed chopped onions, or grated cheese, or add some olive oil. If you add nothing instead it'd still be good :) I suppose.

Mmmmmm... those meatballs look more than just 'yummy'. I'm 1000% sure my 4 year old would scarf them, and he's just about as picky as your little guy, on the cheese and carbs diet for sure.
