It's funny, I wouldn't have thought of Wolfgang Puck and challah in the same sentence.

I have to say, I don't bake bread often, but when I do Challah is TOTALLY worth the effort. Yours looks totally amazing.

YUM! And your braids are gorgeous - still working on mine! My recipe only requires 2 rises. A while ago in an effort to find ways to not have to babysit the dough & the rises (and to be able to have for Fri dinner if I wanted), I found I could freeze the dough! So after the first rise, I shape the dough, then wrap it in saran and then foil and freeze. When I'm ready to use (usu for dinner), I take it out in the morning, put it on a pan, and place it in the oven (b/c it's dark...) It has defrosted and risen a second time by the time I get home and I can just cook it!

I've never tried an overnight rise in the fridge, though...that is something I need to try, also!

I am fortunate that a) my husband loves to cook and b) he works from home two days a week. Since he has to stay home, he makes fresh bread at least once a week. Challah is a special treat he makes on occasion and otherwise we stick with whole wheat.
