That looks delicious Nurit. I love cauliflower. I totally understand the "meh" cooking feeling. I get it every once in a while when life gets so overwhelming that all my energy has to be devoted to simply surviving. But then the comeback meal is even more special, that feeling of being back where you belong. Love it!

You roasted the apples with the cauliflower? What a fantastic idea! My husband loves when I cook with apples but I don't do it often. Great recipe.

Marie, potato or pumpkin in the Mac-n-cheese sounds good. Thanks! I think I won't mix it with whole wheat pasta though... :)

Tamar, I thought it was a suprising combinaiton, but it works!

Ivy: Ooh, a "meh" t-shirt. I got to get one of those :) I'm feeling better already...

Kelly: for a second there, I thought you were talking about a real dog :)

Nate: a splash of lemon never hurts! Great idea.

I don't know about these other posts but cauliflower + apples sounds strange together. But since the recipe requires little work I'll try it : )

I understand feeling like you're cooking "meh" and feeling that need to play with ingredients that sometimes flop, but luckily sometimes don't! Try sweet potato or pumpkin in the mac-n-cheese. I'll have to try the cauliflower. I'm opening up to new foods that I don't usually eat because I want my toddler to learn to eat healthy.

Congratulations on finding your footing again! I love the red onions in this dish. Onions and apples really go together well.

I'm thinking a little acid might help punch up the flavor, like a splash of lemon juice or good white wine vinegar.

I always feel the same way when I make something I don't think is that special. I went through a phase when I first got my dog where I was exhausted and eating mostly frozen food and my boyfriend teased me relentlessly that due to my consumption of frozen food my blog was a lie.

You've got one of my favorite flavor combos there: apple and cauliflower.

I hear ya about picky eaters (I married a picky vegetarian. sigh.)and "meh" dinner nights! I even have a tshirt from thinkgeek that says "meh." on it for just such days. Meh can be good sometimes, but that darned cauliflower dish you got there looks like it might just bust you out of the "mehs". Hope it helps me do the same...
