So 100% agree with you! I hated meatloaf; stuffing (dressing); gumbo! Brussel Sprouts and anything bell pepperish or onions!!!! We HAD to eat what my mother put on our plate. As an adult, however, I love these same dishes I dispised as a kid. As a teacher and one who loves to cook with children I have relized that many American children aren't use to exotic flavors unless they grew up with them from day one. I actually liked the FLAVOR of many of these dishes but hated the texture of the crunch of the veggies. If you take the skin off of the peppers and grind/chop them up many children are unaware. Same with onions. The onions need to be chopped very fine in order for kids not to see them. I've done this with cooking and many children love the way I cook!

Try making funny faces out of the bell peppers...like a monster face with olives for eyes and carrot for tongue. It makes it fun and might help get past the "yucky vegetable" line that kids create. :)

That's funny. I hated stuffed peppers when I was a kid too. It was the pepper part I really didn't like. I would take the stuffing out and give my mom the pepper. Sometimes she would make it for me without the pepper. Now I love it. I've always used green peppers though. Will have to try it with red or yellow next time.

I recently realized that I really like stuffed peppers but for some reason when my mom and I make them, they always come out spewingl liquid. How do you prevent this from happening? No one likes watery stuffed peppers! :)

Yeah. I didn't like tofu before and now I do.

When it comes to kids, you can't make it some challenge "Oh if you eat this, we'll reward you." That just puts it in their mind that it is a bad thing that has to be suffered. Just be indifferent and if they miss out their loss when you go back for 2nds...3rds...4ths..:O
